« Cai Hanwen was the promoter of the authentic hot-and-dry noodle recipe.
He passed away at 82 on August 10.
His father, Cai Mingwei, invented hot and-dry noodles, an innovation based on the Huangpi oil noodles and water cut noodles, and then established the famous hot-and-dry noodles brand Cailinji.
As the eldest son of the inventor, Cai was devoted to the promotion of hot-and-dry noodles during recent years. In his eyes, the fame of Cailinji is built on its use of authentic ingredients and peculiar techniques.
First, the dough needs to be kneaded with egg whites. Sesame oil, sesame sauce made of white sesame, and the dressing of diced turnips should all be prepared with extra care. Cai often went around the city’s various noodle restaurants and stalls, trying to persuade owners to make authentic hot-and-dry noodles. In 2010, he recruited apprentices to do the same. The owners of Changqing Maixiangyuan and Zengmazi have both learned the techniques from him.

Currently none of Cai’s three daughters are in the catering industry. He held shares of a chain restaurant, Cai Mingwei Wuhan Famous Snacks, with a technical partnership. »
